Chicken Curry_Ammas Style

Chicken Curry - Ammas Style

Ingredients:

  • Chicken - 1/2 Kg
  • Onion - 2
  • Tomato - 2
  • Ginger - 1 inch - crushed
  • Garlic - 8~10 cloves- crushed
  • Turmeric powder- 1/2tsp
  • Chilli powder- 1tsp
  • Coriander powder- 1tsp
  • Curry leaves- As required
  • Coriander leave - For Garnish
  • Cinnamon- 1inch stick
  • Cloves-2
  • Salt - To taste
  • Oil - 2tbsp
  • Fennel seeds - 1tsp 
  • Pepper powder- 1tsp



Method:

  1. In a pad add oil and head it for 2 minutes and add fennel seeds, cinnamon, cloves and curry leaves and saute it for 5 minutes.
  2. Then add onion and add Saute it for few minutes.
  3. Now add the crushed ginger and garlic ( You can make it a paste and add too)
  4. Once the ginger and garlic is fried in the oil add the tomatoes and add Turmeric, chilli and coriander powder.
  5. Cook for 3 minutes and then add the cut chicken pieces and mix it thoroughly.
  6. Mix the chicken and cook it for 5 minutes , so that chicken takes in all masalas.
  7. Now add water as required by you. 
  8. Allow it to boil for 20 minutes.
  9. Once boiled and oil is separating, add a tsp of pepper powder and let it simmer for 2 minutes.
  10. Now take it off heat and garnish with Coriander.


You can add potatoes to this dish. Also you can skip pepper if you do not like the pepper flavor.

Mutton Chops Green Masala_ Ammas style

Mutton Chops

This is my 4th recipe , and this dish again is one of my favorite.  I generally do not eat Mutton Chops in any other style. Try this out....

Ingredients

  • Mutton Chops - 1/2kg,
  • Salt to taste
  • Turmeric Powder- 1tsp
  • Oil - As required.
  • Onion - 1 Big
  • Chilli Powder-1tsp
  • Tomato- 1  

To Fry and Grind-

  • 3tbsp Grind coconut
  • 4~5 Green Chillies
  • Pepper- 1/2.tsp
  • Cumin Seeds- 1/2 tsp
  • Cinnamon- 1inch Stick
  • Cloves- 3~4
  • Fennel seeds- 1/2tsp
  • Ginger- 1inch piece
  • Garlic- 10~12 Cloves
  • Mint leaves- Handful
  • Coriander Leaves - Handful

Method

  1. Fry and grind all the ingredients to a coarse paste mentioned above.
  2. Pressure cook the Chops with Turmeric powder and a pinch of salt for two whistles
  3. In a separate pan - add oil
  4. Add onions cut into small pieces and saute it for2 minutes
  5. Now add the pressure cooked chops to this pan.
  6. Add little chilly powder, Saute it and then add the Grind masala paste.
  7. Mix it nicely and cook for 5 minutes. 
  8. Add tomatoes and Cook till the raw smell of the masala goes. 
  9. Garnish with Coriander and serve hot.

You  can also add peas if you want to  after step 4.It gives a different flavor. Serve with rice, chappati or even dosa and idli.

Simple chicken Fry Ammas Style

 Chicken Fry Recipe

This one is a Simple chicken Fry recipe. Many variations to it. Simple and tasty..

Ingredients

  • Chicken - 1/2 Kg with Bone.
  • Tomato - 2 Big size
  • Onion - 2 Big Size
  • Garlic- 10 cloves
  • Turmeric - 1tsp
  • Salt - To taste
  • Oil - 2tbsp
  • Cinnamon-1 inch stick
  • Cardamom-1~2
  • Cloves-3~4
  • Fennel seeds -1 tsp
  • Chilli powder - 1tsp
  • Coriander leave- handful

For Powder -Dry roast the cinnamon, cloved,cardamom,fennel seeds and make a powder

Method:

  • Heat oil in the pan
  • Add Garlic, onion and tomato and saute it.
  • To this add chicken and mix it well.
  • Now add Turmeric, Chilli and salt.Fry it for few minutes
  • Add little water and let it cook for 15 minutes.
  • Add the masala powder and mix it and cook it for 2 minutes 
  • Remove from the heat and garnish with coriander. Its ready to eat.
 Instead of making a powder of the spices,you can add them in the second step and add pepper powder and curry leave at last and pepper chicken is ready:-)

Fish Curry recipe


Fish curry recipe

This fish curry recipe is a Tangy version of fish curry. Not sure which region in south makes it, but for sure its a hit with all my friends and family when mom makes it....so here goes the recipe...Sorry guys no pictures, as theser are just written on the go...Will definitely post pictures very soon and tag it to these recipes


Ingredients


  • Fish - Sardines/Seer/Mackeral- 1/2 Kg
  • Tomatoes - 3 
  • Onion - 2
  • Tamarind - 2tablespoon, or a small lemon sized tamarind ball
  • Oil- 2tbsp
  • Garlic- 10~15 cloves
  • Chilli powder
  • Turmeric powder-1tsp
  • Mustard seeds- 1tsp
  • Fenugreek Seeds-1tsp
  • Asafoetida- A pinch
  • Curry leaves- handful
  • salt - to taste
For the Masala Paste - Grind tomatoes,1 onion,7~8 garlic,tamarind,chilli powder.

Method:
  • Wash the fish with rock salt and turmeric powder
  • In a pan add oil and crackle the mustard seeds.
  • Then add Fenugreek , Asafoetida,curry leaves,onion,Garlic adn turmeric powder
  • Saute this and then add the masala paste and salt.
  • saute it till the masala is cooked.
  • If you want it more watery add little water and let it cook.
  • Add fish at this stage and close the pan for about 5 to ten minutes or till fish is cooked.   
  • Let it cool down and let the fish soak in the masala's
  • And this simple fish curry is now ready to eat.


Tastes best the next day:-)...you can eat it with Idli or dosa, tastes better with Sardines.

My First Blog here: Recipe 1 - Mutton Curry- My mom's Style..

To all the food lovers...This is my first blog .. I just wanted to post some home made recipes, most of which is my mom's recipes. 

Tried many places to get good food which suited my taste buds, but no, i never could get that taste..probably because what my mom made was with love...to feed her son..and also my taste buds have gotten really  used to my mom's recipes...Ok let me go to recipes...

First in the list would have to be my TOP favorite Mutton Curry


Mutton Curry Recipe
 
Its a simple mutton curry which is really tasty when you add potatoes and drumstick.


Ingredients
  • Mutton - 1/2 Kg ( Any Cut)            
  • Oil - 2 tbsp
  • Coconut - 1/2 scraped
  • Ginger - 1 inch
  • Garlic - 10cloves
  • Chilli- 2~3
  • Chilli powder- 1tsp
  • Coriander powder-1tsp
  • Cinnamon -1 inch stick
  • Cloves- 3~4
  • Cardamom - 1~2
  • Fennel Seeds- 1tsp
  • Onion - 2 Big onions
  • Tomato - 2 tomatos
  • Salt - to taste
  • Turmeric powder- 1tsp

Masala paste - Mix Coconut, ginger, chilli,  garlic, Cloves,cardamom, fennel seeds and make a paste adding little water. Make it a fine paste.

Method:

  • Add two tbsp oil into the cooker and head it, add chopped onions, choppped tomatoes.
  • Once onion and tomato have been sauted for 5 minutes, add Mutton pieces
  • Mix the mutton nicely with onion and tomato piece and saute it for another 10 minutes
  • Then add Chilli powder,  coriander powder and turmeric powder. 
  • Add little salt and water and let it cook for 3~4 whistles
  • Then once the pressure is off, add the masala paste to the cooker and let it boil for 20 more minutes.
  • Check the salt and water and add as required. 
  • Garnish with coriander and is ready to serve..    
 
  
 You can add potato's and Drumstick along with the meat or boil it separately and add it post adding the masala paste. This is just an option. More recipes to come....
